A medium bodied coffee with a well balanced acidity and a smooth finish. It has the fruity and nutty flavour notes associated with the region, with some hints of caramel, cocoa and earthiness.
Far down near the southern edge of Mexico, the Chiapas region is right on the border of Guatemala's Huehuetenango region, so the coffees share some similar traits. We apply our light-medium roast to these beans to maximize sweetness and allow all the flavor notes to shine through.
